Step 1
Heat 3 tbsp of olive oil in a large skillet or saucepan.
Step 2
Add yellow onion and stir for 5 minutes until onion is translucent. Then add minced garlic and stir for one minute.

Add tomato paste, vodka, red pepper flakes, salt and pepper. Stir to combine and simmer for 5 minutes or until vodka has evaporated.
Step 4
Add crushed tomatoes and one cup of water. Stir to combine and simmer for at least 30 minutes over low heat. Stir occasionally to keep from sticking to pan.
Step 5
Cook desired pasta following its package directions.
Step 6
Remove sauce from heat and add heavy cream and parmesan cheese. Stir to combine.
Step 7
Serve pasta with vodka sauce, extra parmesan cheese and fresh basil leaves on top.
