Step 1
Combine all the ingredients EXCEPT THE OLIVES and vinegar in a small saucepot.
Step 2
Heat over low/medium-low heat for 5-10 minutes, until the olive oil is very warm, borderline hot. You want the garlic to soften and for all the flavors to meld.
Step 3
Remove from the heat and carefully add the olives to the oil. Stir occasionally and let them warm in the oil.
Step 4
Add the vinegar and stir to combine. Let sit for 15-20 minutes before serving.
Step 5
You can keep it warm over very low heat or in a small slow cooker if you'd like.
Step 6
Store in a covered container in the fridge. Reheat before serving.
