Step 1

Boil, steam or microwave potato about 10 minutes or until tender; drain.

Step 2

Fry chorizo in a dry heated frying pan until crisp on both sides; remove from pan.

Step 3

Add potato to same pan; cook, stirring gently, until browned. Remove from pan.

Step 4

Remove pan from heat, add combined oil, vinegar and sugar to pan. Return to heat, boil, uncovered, for 2 minutes or until reduced slightly.

Step 5

Place potato and chorizo in large bowl with onion, spinach and tomatoes; drizzle with vinegar mixture. Toss gently to combine.
