Step 1
Heat 2 teaspoons of oil in a medium frying pan over medium heat. Add tomatoes and garlic. Cook, turning, for 8 minutes or until skins begin to blister and blacken. Transfer to a bowl. Stand for 10 minutes. Remove and discard skins from tomatoes and garlic. Roughly chop tomato flesh. Crush garlic.
Step 2
Place coriander, chilli, lime juice and remaining oil in a bowl. Add tomato and garlic. Stir to combine. Transfer to a serving bowl. Serve.
