For a refreshing summer side, serve lemony Watermelon-Cucumber Salad to go along with your favorite grilled dish.

Watermelon-Cucumber Salad

olive oil

lemon juice

salt

watermelon

cucumber

¼ cup thinly vertically sliced red onion

basil

Combine oil, juice, and salt in a large bowl, stirring well. Add watermelon, cucumber, and onion; toss well to coat. Sprinkle salad evenly with basil.


This is soooooooo easy and soooooooo delicious -- cool and refreshing in the heat of summer. Only minor change I suggest is paring the skin off the cucumber completely. I found that even paring just half the skin still left it too bitter. If you want more green increase the basil which was a delightful surprise.

WOW, this was a surprise how great it was!  I didn't think my husband would like it at all, but he thought it was great!!  This is something we will definitely make again.  Served as a side to Grilled Chicken with Honey BBQ sauce from same issue, but not sure what else I could serve it with because it is so unique.

This was really tasty and unique.  My husband was skeptical of the basil and watermelon, but he really liked and had seconds and thirds.  Don't make too far in advance b/c the juice comes out and gets watery at the bottom of the bowl.

Easy to make, fresh and a little different.  Good summer salad.  I subbed in shallots for red onion.

Easy to make and tasty, especially if you add some feta or goat cheese. I thought a 1/4 cup of red onion was a bit much and cut it down, but I ended up adding more once I tasted the finished product. If you have sensitive teeth, make sure it's at room temperature when you serve it to be fully enjoyed!

WOW!  Simple to prepare with a fantastic flavor that is fresh and has a crunch.  Severed with grilled steaks and corn on the cob.  Tastes like the best of summer.

I made this as directed plus added some feta cheese. I liked it a lot, and my husband loved it!  It is a great recipe for in season produce!

This salad was very good, light and different.  I usually don't eat cukes as they bother my stomach, so I peeled them leaving thin, green strips and it seems to have worked.  My husband isn't crazy about red onions so I just put a few in and we both said we'd definitely make this again.

Great, light, and easy.  Have made this twice with both grilled chicken and grilled pork chops.  The second time had a bowl of feta on the side for those that wished to add it.  Which made a great new taste. Mmmm Mmmm

This salad was easy and refreshing - everyone loved it. I did make one addition after tasting this salad - sprinkle crumbled feta on top before serving. Delish!
