Ingredients: 3 1/2 pounds seedless watermelon (rind removed), cut into 1-inch cubes (6 cups); 2 tablespoons fresh lime juice; 1/2 cup fresh basil leaves, cut into thin strips (see note); Coarse salt and ground pepper; 4 ounces feta cheese, broken into large pieces (about 1 cup)

In this summery salad, sweet watermelon is the perfect foil for tangy feta cheese.

Watermelon Salad with Feta and Basil

In a large bowl, combine watermelon, lime juice, and half the basil; season with salt and pepper. Toss to combine. Divide among four plates; scatter cheese and remaining basil on top.

Made this in the am and was worried it wouldn't hold 'till dinner but it was great.  transferred into serving dish so that it wasn't so watery - all the flavor stayed. Will make again.

I wasn't sure about the combo of ingredients when I first read the recipe...but bumped into it at the country club over the holiday weekend.....oh my gosh...so refreshing on a hot day....now my favorite go -to salad during the summer!!  Thanks once again Martha!!
