Ingredients: 4 cups diced seedless watermelon; 1 cup diced red onion (about half a medium red onion); 2/3 cup chopped fresh cilantro leaves; 1/2 cup chopped fresh mint leaves; 1-2 jalapeno(s), seeded and finely diced (add more/less to taste); zest and juice of 1 lime

This fresh watermelon salsa recipe is quick and easy to make, and tastes so refreshing!

Watermelon Salsa

cilantro leaves

mint leaves

lime

Toss all ingredients together until combined.  Serve immediately, or cover and refrigerate for up to 2 days.

I made this using a Vidalia onion instead of a red one &amp; substituted basil for cilantro &amp; it was delicious!!  I served it as a topping for Mahi mahi fillets—perfect!!

I made this recipe from some leftover watermelon and my family loved it. I used lemon juice as well as lime juice.

Love this recipe. Did not make it last year for camping and my daughter let me know about it lol this year I will not forget
