Step 1
In large skillet heat oil over medium heat-high heat. Add sausage cook for 5 minutes, stirring frequently.
Step 2
Add green onions, bell pepper and garlic cook for 4 minutes or until vegetables are tender.
Step 3
Using a 13 x 9 in baking dish arrange English muffin pieces in a single layer.
Step 4
Top with sausage mixture and both of the cheeses. In a large bowl whisk together, eggs and milk.
Step 5
Slowly pour egg mixture over over cheeses in baking dish. Cover with foil or plastic wrap and chill for at least 8 hours.
Step 6
Uncover casserole and let stand at room temperature for 30 minutes. Preheat oven to 350 degrees.
Step 7
Bake casserole 45-50 or until casserole is set. Cover with aluminum foil (that has been sprayed with non stick spray) to prevent over browning if necessary.
Step 8
Let stand for 10 minutes before serving. Add salt and pepper, to taste if needed
Step 9
If using a glass baking dish lower the temperature to 325 degrees.
