Step 1

Whisk the egg yolks and Dijon mustard in a large bowl until smooth.

Add the minced garlic and lemon juice, then whisk again until very well blended.

Step 3

Run the hand towel under water until it's wet. Then ring out the excess, roll it into a loose log, and place it on the counter in a ring.

Step 4

Put the bowl into the center of the towel ring - to keep it in place while whisking.

Step 5

Next, very slowly pour the oil into the bowl, whisking constantly and rapidly.

Step 6

Keep whisking until all of the oil is fully incorporated, and the mixture is emulsified.

Step 7

Let the mayo rest for a minute, then gently stir in the lemon zest and Kosher salt.

Step 8

Store in the fridge.
