Step 1

Preheat oven to 350°F. Grease and flour two 8″ round cake pans.

Step 2

In a glass measuring cup, combine ½ cup of buttermilk and oil.

Step 3

In a bowl, whisk together remaining buttermilk, egg whites, and vanilla extract.

Step 4

In another bowl, combine flour, Splenda Stevia Sweetener, baking powder, salt, and baking soda. Add butter and blend with an electric mixer on low speed until mixture resembles coarse sand.

Step 5

Add buttermilk-oil mixture and blend on low speed.

Step 6

Add half of the buttermilk-egg mixture; mix on medium-high speed until well blended. Add remaining buttermilk mixture and mix until well blended.

Step 7

Transfer batter to prepared pans.

Step 8

Bake for 30–35 minutes, or until a wooden pick inserted in center comes out with just a few moist crumbs. Cool for 15 minutes on rack before removing from pans. Once cool, frost as desired.
