My mac and cheese is simple and has lots of flavor from the cheeses and ground chipotle chile. I use conchiglie pasta because its shape allows more melted cheese to pool inside. Yum! &mdash;Colleen Delawder, Herndon, Virginia

White Cheddar Mac & Cheese

(16 ounces) small pasta shells

butter, cubed

all-purpose flour

onion powder

chipotle pepper

pepper

salt

2% milk

shredded sharp white cheddar cheese

Manchego white cheddar cheese

I live by myself, but I made the full portion, saved a serving for my granddaughter, (who is a mac and cheese freak!) And then I put the rest in the freezer. I did not have manchego, but I had smoked gouda, and used that instead. OMG! So darn good. I put it in a 9x13 casserole dish. I melted 1/4 stick of butter and put some seasoned panko in the melted butter and spread that on the top of the mac and cheese. Baked it, and the top was lightly brown and crispy and the pasta seemed to have absorbed more of the sauce than before I baked it. I had it with chicken apple sausage, and when I froze it, I put a link of the sausage in with that as well. Can't wait to have the leftovers! Thanks for a great recipe. 🥰👍

This is really good.  The ratio of sauce to pasta was a bit off. When I make this again I would do 18-20 oz of dried pasta instead of 16 oz.  I didn't have 2% milk so I used a pint of half and half and 2 c. of skim milk.    I didn't use chipotle but I used harissa instead.  Harissa and Berbere spice are my favorite seasonings lately.

This recipe was a nice change from regular mac & cheese. The sauce ingredients were cut in half after reading reviews & it was plenty for 16 oz of pasta.

I followed initial part of recipe without changes.  However, as we often do since it is only the two of us, we cook pasta slightly under, divide into 3 casserole dishes (top it with whatever I’m feeling) and change it from stovetop recipe to Baked.  Tonight, I topped with Panko and Parm. (Two for freezer) Creamy, delicious Mac and Cheese!  Love the sharpness of the white cheddar!

I absolutely loved this recipe and my husband said this was the best mac and cheese I have ever made.  I read all the reviews but only made minor adjustments..... Medium shells, cause that's all I had, and there was not too much sauce... I'm thinking that made the difference.  I also added 1tsp. of ground mustard and cut the chipotle pepper to 1/4 tsp.  Also placed in a 9x13 casserole dish, topped with seasoned panko bread crumbs and baked for about 25 minutes as suggested.  This will be my go to mac and cheese from now on.... I love this recipe and I love all the cheesy sauce myself and used lactose free milk and I didn’t have any chipotle pepper.  It is very easy to make and fast.  I bet it would be great baked with crumbled ritz crackers on top!   I used two cups of fresh white cheddar cheese that I shredded and two cups of shredded cheddar jack cheese!  Delish.

I made this recipe as written, except I used 1% milk because that’s what I had. It was easy to make and we loved the flavor. I will definitely be making this recipe again!

I was excited to try this macaroni and cheese because I love white cheddar. I think that it was the chipotle powder that wasn't quite my taste. This also had a lot of sauce. Not sure why, as I followed the directions step by step. I might try this again with some of my own modifications.

I made this recipe almost  as written  and it is delicious.  The one thing I did differently was to bake it for about 20-25 minutes until the top was bubbly and a little bit browned.  I have made it twice now.  Delicious!

Good recipe.  We had it with grilled chicken and a salad.  My child that doesn't care for mac n' cheese because it is too cheesy, ate it.  Good enough amount to make every one happy in this house.

This was good, but it was VERY saucy.  I made it alongside grilled steak, but it could have used some bread to cut the creaminess of the sauce.

I would give it 5 stars but I have to agree with other reviews that there is way too much sauce.  I think you could cut it in half for a box of pasta.  We made with a chipotle pork tenderloin on the grill and some garlic bread (anticipating the sauce).  It was delicious!
