Step 1
These burgers cook quickly, so be sure to do all the prep ahead of time. Slice the onions on the mandolin, slice your buns and take your cheese out of its wrapper. Separate your meat into 16 even balls, about 2 ounces each, and use a 1/4 measuring cup to loosely form them into a puck shape.
Step 2
Set your griddle to medium-high, about 350 F.
Step 3
Place the burgers on the griddle with an inch of space between each burger.
Step 4
Place a small handful of onions on each burger, lightly pushing them into the beef. Press the onion further into the burgers using your spatula, lightly smashing the patties until they almost touch each other. Season the burgers with salt and pepper.
Step 5
Allow them to cook for 1 to 2 minutes, then flip them over. Season them with salt again. Then, top them with cheese and stack the buns on top of the burgers (bottom bun first).
Step 6
When the burgers are done, pick them up with a spatula. Take the top bun off the stack, use it to grab the loose onions and tuck them under the burger, pinch the buns and pull the burger off of the spatula, then flip it over.
Step 7
Serve the burgers with sliced pickles and ketchup on the side.
