1 Preheat a waffle iron

2 Whisk together the buckwheat flour, whole-wheat or brown rice flour, flaxseed, baking powder, baking soda and salt in a mixing bowl

3 Whisk together the buttermilk, oil, maple syrup, egg and vanilla extract in a separate bowl

Step 4

4 Pour the buttermilk mixture into the flour mixture, stirring just enough to incorporate

Step 5

5 Grease the waffle iron with cooking oil spray; ladle on batter, close the lid and cook according to the manufacturer’s directions

6 Repeat with the remaining batter
