Step 1
Add all ingredients to a large bowl and mix thoroughly to combine. Form into about 16 small patties.
Step 2
Heat 2 tablespoons avocado oil, ghee, coconut oil, or lard in a cast iron or stainless steel skillet over medium high. Fry patties in batches, adding more oil if needed, for about 2 minutes per side depending on thickness. Cook until nicely browned and cooked through.
Step 3
Eat immediately, or move to the refrigerator until ready to re-heat and serve. These paleo sausage patties also freeze well and can be warmed in a skillet or microwave directly from the freezer.
