Step 1

PREHEAT oven, if using, to 400 °F. Line a 9x13 baking dish with parchment paper.

Step 2

HEAT oil in a large skillet over medium heat. Add ground meat and season it with salt and paprika. Add carrots and cauliflower and cook until meat is browned and cooked through, about 10 minutes.

Step 3

TOSS meat mixture with buffalo sauce.

Step 4

PLACE bell pepper halves the prepared baking dish. Excavate meat mixture evenly into each pepper half, about ½ cup for each.

Step 5

COVER dish with foil and cook at 400 degrees for 40 minutes, until peppers are tender.

Step 6

COOL for 5 minutes, then top with a drizzle of ranch and chopped cilantro, if desired.

Step 7

TO FREEZE – Place cooked stuffed peppers into a sealed container and freeze for up to 3 months.

Step 8

AIR FRYER OPTION - Place in a single layer at the bottom of your airfryer tray and air fry for 8-10 minutes at 350 degrees, or until peppers are tender and filling is lightly browned.
