Step 1
Heat a pan over medium heat and add oil, swirl to coat the surface.Add onion, garlic, and chopped chili in a pan and saute until the garlic and onions start to caramelize.

Lower heat to medium-low and add ketchup, vinegar, sriracha, smoked paprika, chipotle, mustard, brown sugar, molasses, and salt.

Dilute with a little water to evenly distribute flavours, stir to reduce. Simmer for 8-10 minutes, then shut off the heat.
Step 4
Use an immersion blender to combine the ingredients to create a thick glossy sauce.
Step 5
Simmer down for a couple of minutes to thicken to your desired consistency. Add the vegan butter for a silky sheen, stir in to melt and combine.
Step 6
Stores in the fridge for up to a week.
