Step 1
Combine the plum sauce, oyster sauce, ginger, garlic and chilli in a bowl. Brush both sides of steak with 1/3 of the sauce mixture. Set remaining sauce mixture aside.
Step 2
Heat a wok over medium heat. Add 1/2 the vegetable oil. Swirl to coat. Cook steak, in 2 batches, for 3 to 4 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover loosely with foil. Stand for 5 minutes.
Step 3
Meanwhile, carefully wipe wok clean. Heat remaining vegetable oil in wok over high heat. Add pak choy, corn and rice. Stir-fry for 2 minutes or until rice is heated through. Add remaining sauce mixture, onion, shao hsing and sesame oil. Season with salt and pepper. Stir-fry for 1 to 2 minutes or until heated though.
Step 4
Slice steak thickly. Serve rice topped with steak and extra onion and chilli.
