Step 1
Add vinegar, tablespoon of sugar, teaspoon of sea salt, and crushed red pepper to a bowl and stir to dissolve sugar.

Wash cucumber and thinly slice into rounds no more than 1/4 inch thick. Transfer slices to bowl of vinegar mixture and refrigerate for at least 10 minutes.

Step 6
Add soy sauce, sugar, water, vinegar, and sesame oil to a small dish and stir vigorously to dissolve sugar. Set aside until time to serve.
Step 7
Add cooked rice to bottom of bowl. Layer sauteed veggies over rice followed by wontons. Garnish with quick-pickled cucumbers then drizzle a spoon of dipping sauce and sesame seeds over top, as desired.
