Heat oil in a large skillet over medium heat. Add onion and squash and sauté until tender, about 4-5 minutes.

Step 2

Add garlic and sauté for another 30 seconds.

Step 3

Add the corn and pimientos and stir to heat through for 1-2 minutes.
