Step 1

In a small saucepan, combine water and sweetener. Place over a medium heat and cook until the sweetener has dissolved and the liquid is gently bubbling.

Step 2

Lower the heat and gradually whisk in some xanthan gum. Don't be tempted to add more as the mixture will thicken up further as it cools.

Step 3

Add in the honey flavoring - and a pinch of salt, if liked.

Step 4

Leave to cool completely to room temperature, then transfer to a lidded container.

Step 5

Store in the fridge.
