Step 1

Cook 1 pound of pork sausage in a large skillet over medium heat for 5-7 minutes, breaking into crumbles with a wooden spoon. Once the sausage is no longer pink, drain and remove the sausage from the pan.

Step 2

In the same pan, heat 1 tablespoon of oil over medium heat. Add 3 sliced zucchini and 1 chopped onion. Cook while stirring for 5-7 minutes or until tender.

Step 3

Stir in cooked sausage, 1 can of tomatoes, 1 package of rice, 1 teaspoon of mustard, ½ a teaspoon of garlic salt, and ¼ teaspoon of pepper.

Step 4

Bring the mixture to a boil.

Step 5

Reduce the heat and simmer, covered for 5 minutes to allow flavors to blend.

Step 6

Remove from the heat.

Step 7

Sprinkle the mixture with 1 cup of shredded Cheddar cheese. Let the pot stand, covered, for 5 minutes or until the cheese is melted.

Step 8

Serve immediately.
