Zucchini Patties

zucchini

cheddar cheese

biscuit/baking mix

onion

salt

basil

pepper

eggs, room temperature, lightly beaten

butter

Zucchini has a high water content and that will cause it to become soggy and separate or fall apart when cooking.
Remedy:
Once grated, use a liberal amount of kosher salt and let the Z "sweat" for a minimum of 15 minutes to remove the excess water. 
Drain the sweated Z in a colander and then squeeze the excess water out by hand or use the back of a spoon to firmly press the zucchini against the side of your colander.

These patties are SO amazing! I am not a fan of  zucchini. I do not  enjoy the texture or flavor. My daughter loves zucchini and was determined to convince me! She made these patties after finding them on TOH. Oh my! I am a believer! These are incredibly good! She modified the recipe a bit in order to make it more healthy for her Father, using egg writes and fat free cheddar cheese shreds. The delicious taste and texture were unaffected. These are so tasty & flavor-wise,  a cross between a frittata and quiche. They are wonderful with a rich egg flavor. They would make a terrific breakfast or brunch teamed with some fresh fruit, toast, or bagel . These are such a winner! Thank you, Annabelle!

Always looking for new recipes with so much zucchini from my garden. This is a keeper. Family loved.  Read other reviews first and adjusted by adding sea salt to shredded zucchini and then wringing out as much water as I could after 15 minutes. Was still moist, and after adding other ingredients and eggs was like cake batter so added more biscuit mix and bread crumbs, which helped.  Next time might try just one egg or wrapping shredded zucchini in paper towels to get more moisture out. Anyway, delicious and new zucchini dish in our home.

Delicious.  Don't let them sit around after they are mixed.  The liquid separated out.  Next time I make them, and I will, I'll squeeze some of the liquid our of the zucchini.

Oh, my! My whole family loves these! Even our 1 yr old twins! I did add garlic salt to them and extra cheese. Other than that wonderful!

These are so good! They have become a favorite for my family in the summer when zucchini is plentiful from the garden! I added some garlic salt to the recipe and a little extra cheese. Tends to get watery after it sets for awhile so I got out my huge griddle to cook more at a time.

I've been making these every summer since the recipe appeared in the Bountiful Harvest Cookbook.

Has the texture of hash browns or a potato pancake, but tastes SOOOO much better! A great way to get your kids to eat their veggies!

This was really tastey!  A good way to use up zucchini.
