Step 1

苦瓜對半切開,用湯匙將籽和瓜囊刮乾淨,切成薄片備用。

Step 2

鹹蛋取2顆蛋黃壓成泥狀、蛋白切末備用。

Step 3

蔥切花,蒜頭、辣椒、薑切末備用。

Step 4

起一鍋熱水,加少許鹽巴、油,水滾後放入山苦瓜川燙1分鐘,撈起瀝乾備用。

Step 5

起油鍋加熱香油,放入鹹蛋黃炒散起泡後,加入蒜末、辣椒末、薑末爆香。

Step 6

放入苦瓜炒勻,並加入2大匙的高湯煨煮,再放入蛋白末、糖、鹽巴、白胡椒粉調味收汁,起鍋前放入蔥花拌勻即可。
