Step 1
Start by crushing the garlic and finely chopping the onion and the chillies. Then mix the vinegar with the sugar in a small cup. Pour the sauce straight in a food processor, or in a bowl if using a hand-mixer.
Step 2
Next, quickly stir-fry all the chillies and half of the shallot and garlic cloves in the extra virgin olive oil. This infused oil will enhance the sauce flavour.
Step 3
Finish off by blending the tomato sauce with the remaining garlic and onion, the vinegar mixture, the infused oil and the cayenne pepper. Done! Time to proudly show off your own "kebab shop" chilli sauce at the next barbecue.
