Step 1

In a saucepan combine the oats, chia, and cinnamon. Stir to combine. Pour in the almond milk, maple syrup, and vanilla extract. Bring to boil on medium high heat, stir together and then reduce heat to a simmer.

Step 2

Cook the oatmeal for 5 minutes, or until thickened and desired oatmeal consistency. (Optional to add splashes more milk if desired for thinning).

Step 3

When the oatmeal has thickened, stir through the cream cheese. Remove from heat and set aside.

Step 4

In a separate small skillet, melt the vegan butter on medium heat. Remove from heat and stir in the cinnamon. Set aside.

Step 5

Scoop the oatmeal into bowls and drizzle with the cinnamon butter mixture. (Or alternatively, add the cinnamon butter mixture to the saucepan with the cooked oatmeal and swirl it in. Then scoop into bowls).
