Preheat oven to 400°F.
Step 2
Rub olive oil on all sides of roast, then rub on salt and pepper.
Step 3
Place pork loin fat side up in roasting pan, then put in pre-heated oven.
Step 4
Bake 20 minutes per pound, or until internal temperature of roasts reaches 145°F when measured with a meat thermometer.
Step 5
Remove from oven, tent with foil, and allow to rest 10 minutes before carving.
