Step 1

Place the softened butter in a bowl and add the chives, garlic, lemon juice, crushed red pepper flakes and black pepper.

Step 2

Stir until throughly combined. Form into a log and wrap with parchment paper.

Place in the refrigerator.

Step 4

Season the steaks with salt and pepper and allow to sit at room temperature for 1 hour.

Step 5

Brush with oil.

Step 6

Select GRILL HIGH, and press START/STOP to start preheating.

Step 7

When the unit is preheated, place the steaks on the grill grate. Press them down for maximum charring.

Step 8

Close the hood.

Step 9

Cook for 5 minutes and flip. Cook for about 4 to 5 minutes more (for medium-rare) or to desired doneness. (Use an instant-read thermometer.)

Step 10

Remove the steaks from the grill and place the butter slices on top.

Step 11

Tent with foil and allow to rest for 5 to 10 minutes.

Step 12

Preheat your grill to high heat. (About 500 degrees F)

Step 13

Transfer the steaks onto the grill.

Step 14

Cook for about 5 minutes per side or to desired doneness.

Step 15

Remove the steaks from the grill and place the butter slices on top.

Step 16

Tent with foil and allow to rest for 5 to 10 minutes.
