Step 1

If using: Start by making the flax egg. If regular egg is being used, skip this step. Combine the flaxseed meal and water together in a small bowl and set aside for 10 minutes to allow to congeal before using.

Step 2

(If using: once flax egg has sat for 10 minutes), add all ingredients to a medium-sized bowl and stir together until a smooth batter is formed.

Step 3

Preheat a frying pan over medium-low heat with oil of choice (I used coconut oil).

Step 4

Pour 1/4 cup batter in pan at a time to make pancakes. Fry for 4 minutes on each side without touching heat settings on stove.

Step 5

Top with guac u0026 a poached egg and enjoy!
