Step 1

Line a loaf pan with parchment paper. (Alternatively, you can use a rimmed baking sheet and make thinner "yogurt bark.")

Step 2

In a medium mixing bowl, whisk together yogurt, peanut butter, cinnamon and vanilla. Taste mixture. It will be tart. If you'd like it sweeter, add 2 tbsp honey or maple syrup. Fold in sliced banana.

Step 3

Spoon mixture into prepared pan and use a rubber spatula to smooth the top. Place in freezer and freeze for about 3 hours, or until set.

Step 4

Once frozen, slice into 8-10 bars. Let bars sit for 5 minutes at room temperature before serving, if desired. Store in the freezer.
