Step 1
Crust: Preheat oven to 350°F (175°C).Mix graham cracker crumbs, melted butter, and sugar until well combined.Press mixture into the bottom of a 9-inch springform pan.Bake for 10 minutes. Let cool.

Filling: Preheat oven to 325°F (163°C).Beat the cream cheese until smooth. Gradually add sugar and mix well.Add eggs one at a time, beating after each addition.Mix in sour cream, vanilla extract, and lemon juice until smooth.Gently fold in fresh and freeze-dried strawberries.Pour filling over the cooled crust.
Step 3
Bake the Cheesecake:Bake for 50-60 minutes, until the center is set but still slightly jiggly.Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.Remove from oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight.
Step 4
Prepare the Topping:Combine graham cracker crumbs, nuts (if using), brown sugar, and melted butter.Sprinkle the topping mixture over the chilled cheesecake before serving.
