Cut the jalapenos in half from top to bottom. You can remove the stem and then cut it in half. Or you can cut the jalapenos in half along with the stem.(Note: If you don't want jalapeno poppers to be spicy, then de-seed the jalapenos and wash them. Some jalapenos are super spicy & some are mild. So to be safe when you cut the jalapenos half, de-seed the jalapenos).
De-seeds the jalapenos using a spoon or knife. Then carefully wash the jalapenos and remove any extra seeds from the jalapenos. If you like it spicy, you can leave the seeds too.(Note: When cutting the jalapenos wear gloves. Because if the jalapenos are hot, your hands or face will burn from the heat of the jalapenos).Also, if you feel that the jalapenos are very spicy, you can air fry the jalapenos. Line the jalapenos in the air fryer basket and spray some oil. Then air fry for 5 minutes at 400°F.
Boil the potatoes in the instant pot or on the stove-top pressure cooker. Once the potatoes cool down, then remove the skin. Then using a potato masher or a fork, mash the potatoes until they are free from lumps.
Fry cumin seeds and coriander seeds in the oil. Then add mashed potatoes to the pan. Add spices (red chili powder, garam masala powder, mango powder, cumin powder, and salt). Add some fresh cilantro and mix. Mix all the ingredients until well combined and transfer in a bowl.
In a bowl, add bread crumbs. And add 2-3 tbsp of melted butter. Mix until well combined.
Add a generous layer of potato stuffing to the jalapenos. Top the jalapenos with the breadcrumb mix. Lastly, sprinkle some cheese to coat the jalapenos.
Preheat the air fryer for 3 minutes at 400 degrees. Place the jalapenos in the air fryer basket. Air fry for 5-8 minutes at 360 degrees until a little golden in color.
Serve these air fryer jalapeno poppers hot with some ketchup or aioli or any other sauce of your liking.
