Step 1
Set your instant pot to the "Saute" setting or set a large pot over medium-high heat. Add the oil and allow to get hot. Salt and pepper the pork on all sides and sear the meat in the pot, 2-3 minutes per side.
Step 2
In the bowl of a food processor, place the onion, bell pepper, and garlic. Pulse until all veggies are ground.
Step 3
Remove the pork from the pot and set aside on a cutting board. Add the ground veggies to the pot, along with some salt and pepper, and sauté until fragrant, about 2 minutes.
Step 4
Add the tomato paste and spices to the pot. Stir. Add 2 cups of water and stir, scraping the bottom of the pot to pick up any browned bits. Add all the veggies except the corn and any ripe plantains you may be using.
Step 5
Chop the reserved pork into 2-inch cubes. Add to the pot along with enough water to just cover the veggies and meat. Stir to mix. Bring the mixture to a boil, then reduce to a simmer and cover, letting it cook at least 1 hour or until the veggies are tender. If using an Instant Pot, set it to pressure cook for 30 minutes before releasing the pressure.
Step 6
Once the pressure is released, add the corn and ripe plantain and simmer another 10 minutes. Adjust the seasoning as needed and enjoy!
