Step 1

Preheat oven to 350F/180C and grease a 9X5 loaf pan.

Step 2

In a medium bowl whisk together the almond flour, salt, and baking soda.

Step 3

In a large bowl mix together the butter, sugar, eggs, and vanilla.

Step 4

Add bananas and use a potato masher to mash them. Gently fold in the dry ingredients until just combined.

Step 5

Pour into prepared pan. Sprinkle optional brown sugar topping.

Step 6

Bake for 48-53 minutes or until a toothpick inserted comes out clean. Let cool at least 30 minutes before removing from pan. Let cool on a wire rack. Store at room temperature unless you live in a warm climate store in the fridge.
