Step 1
Saute the carrot, celery, onion, and garlic in a large soup pot over medium heat until the onion softens and turns translucent.
Step 2
Add the beef broth, water, diced tomatoes, tomato paste, diced potatoes, Italian seasoning, salt, and pepper to the pot and combine well. Bring the pot to a rapid simmer and reduce the heat. Simmer for 15-20 minutes until the potato is tender and cooked through.
Step 3
Add the uncooked alphabet pasta.
Step 4
Cook for 8-10 minutes until the pasta is as dente.
