Chinese Pork Bone Soup with Tomatoes, Potatoes &amp; Corn

Soak the pork bones for 1 hour with enough cold water to cover them completely. Rinse 2-3 times until the water runs clear. (If substituting chicken, you can skip this step.)

Add the bones to a large, thick-bottomed soup pot, cover with fresh water, cover, and bring to a boil. Once boiling, let it boil for 1 minute, then drain through a colander. Rinse the pork bones clean, drain, and set aside.

Wash the pot and dry it thoroughly. Heat it over medium heat, and add the oil, tomato paste (if using), and the tomatoes. Cook for 5 minutes, or until the tomatoes are softened. Add the 9 cups of water, along with the pork bones and corn. Cover, increase the heat to high, and bring the soup to a boil.

Once boiling, reduce the heat to medium-low. Cover and simmer for 1 hour (for ribs or chicken) or 90 minutes (for neck bones).

Next, add the potato chunks, cover, and bring the soup to a boil once again. Reduce the heat to medium low and simmer for another 30 minutes, until potatoes are tender. Skim off the grease floating on the surface of the soup (optional), and stir in the salt. Serve the soup with salt, so that each person can add more to taste before enjoying. Serve the pork or chicken from the soup with light soy sauce for dipping.

Potato Tomato Carrot Soup (ABC Soup)

300 gm Lean Pork Meat

Potato (medium)

Carrot (medium)

Yellow Onion (small)

Tomatoes

Salt (optional)

tsp Light soy sauce

tsp Cornflour

Peel the carrots and potatoes and dice the pork meat, potatoes, carrots, tomatoes and onion into 1.5 cm cubes.

Marinate the pork meat in soy sauce, cornflour, salt and oil for 15 mins.

PREPARATION METHOD

Add 2 litres of water to a pot and bring it to a boil over high heat.

Add in the diced carrots, potatoes, tomatoes and onions.

When it is boiling, turn the fire down to medium and simmer on medium-low heat for 20 minutes until carrots are soft.

Add in the pork, then give the soup a stir and boil for another 5 mins.

Add salt to taste and serve.

COOKING METHOD

450-500 gram Chicken drumsticks (Or chicken with bones

Carrot (Cut big cubes)

Tomatoes (Cut wedges)

1½ Cup Water (Or add more water if needed)

First prepare the gather the ingredients by cutting the vegetables into large cubes and slices.

Fill the large pot with water and bring it to boil. Add the chicken pieces and blanch them in the boiling water just for 1-2minutes. Drain the water out and rinse the chicken with cold water.

Place the chicken drumsticks back in the pot, add carrot, potato, sweet corn, onion, celery, and ginger slices. Pour the water in and bring it to boil. ( Add enough water to cover the chicken and vegetables. ) Add salt to taste.

Then reduce the heat, close the lid and simmer with low-medium heat for about 30 minutes, then add the tomatoes. Continue cook for another 15 minutes, or until the chicken and vegetables are tender.

Add freshly ground black pepper. Make a taste test and adjust salt to taste.

Transfer to a serving bowl, sprinkle chopped spring onions. Enjoy!

This Malaysian-style ABC soup is warm, cozy, and super comforting to have. Packed with nutritious veggies, this soup is filling and satisfying without being overly heavy. This version is meatless too, making it suitable for vegetarians and vegans.

Heat up a tablespoon of neutral oil in a Dutch oven/soup pot. Once pot is heated, add in onion and saute for 2-3 minutes, or until translucent.

Next, add in all veggies, and saute for 4-5 minutes, or until they have soften slightly.

Pour in vegetable broth and water, and bring the mixture to a boil. Lower heat to a gentle simmer, and cook, with the lid on, for 1-2 hours.

Season it with salt and black pepper. Serve it with a side of rice, or whatever you like!

Peel and slice the ends off the onion. Cut into 1-1.5 inch sized pieces.

Chop the corn on the cob into 4 pieces.

Slice the tomato into wedges.

Peel the carrot and slice into 1-1.5 inch sized chunks. I like to slice diagonally, then rotate the carrot halfway and slice diagonally again for pieces with large surface area.

Prepare the potato last, since it will oxidize if exposed to air too long. Peel the potato and slice into 1.5-2 inch sized chunks. Since these will disintegrate the most in the soup, making them larger will help them stay in tact.

Prepare the ingredients

Bring a pot of water to boil. Drop in the chicken drumsticks, and blanch for 1-2 minutes. If using pork ribs, blanch for a few extra minutes to get rid of all the gunk.

Pour out the blanching water, and give the chicken and the pot a quick rinse.

Add the chicken back into the pot with all the vegetables, and 6 cups of water.

Bring it all to a boil, and skim off any scum on the surface.

Reduce to a very gentle simmer (low to medium-low heat), then cover and let simmer for at least 45 minutes. I like to let it simmer for 90 minutes to extract more flavor from the meat and veggies.

Season with salt, white pepper, chicken bouillon powder, and sesame oil. Garnish with scallions and enjoy!

adore it! i didnt have any corn and was still delicious, I used chicken thighs instead and fried them off in a pan before adding the water and simmering. 

i had mine with a soy marinated egg and vermicelli noodles- with some coriander its my new budget-friendly comfort food :)

Saute the carrot, celery, onion, and garlic in a large soup pot over medium heat until the onion softens and turns translucent.

Add the beef broth, water, diced tomatoes, tomato paste, diced potatoes, Italian seasoning, salt, and pepper to the pot and combine well. Bring the pot to a rapid simmer and reduce the heat. Simmer for 15-20 minutes until the potato is tender and cooked through.

Add the uncooked alphabet pasta.

Cook for 8-10 minutes until the pasta is as dente.
