Step 1
Cook the amaranth according to pack instructions. Drain and set aside.
Step 2
In a small bowl, mix the water with the flaxseed. Set aside for 10 minutes.
Step 3
Heat up a little oil in a frying pan and fry the onions until translucent, for about 3-5 minutes. Add the garlic cloves and fry for another minute. Set aside.
Step 4
In a medium-sized bowl, add the cooked amaranth, the flaxseed mixture, the herbs, cooked onion and garlic, flour, lemon, nutritional yeast and mix well. Add salt and pepper to taste.
Step 5
The mixture should come together and be fairly sticky but easy to handle with your hands. If it's too sticky add a little more flour. Create small meatballs with the amaranth mixture and set them aside for frying.
Step 6
Heat up a little olive oil in a frying pan and fry the amaranth meatballs on both sides until crispy and golden.
Step 7
Serve them in a hot dog bun with the toppings of your choice.
