A super easy recipe for making vegan amaranth meatballs. Made with simple ingredients in a quick way so you can enjoy the best ever lunch or dinner.

Amaranth Vegan Meatballs

amaranth (250 grams)

onion,

garlic

lemon juice

tbsp, chopped fresh herbs

yeast

tbsp all purpose flour

tbsp, ground flaxseed

water

Olive oil

salt and pepper

Cook the amaranth according

Cook the amaranth according to pack instructions. Drain and set aside.

In a small bowl,

In a small bowl, mix the water with the flaxseed. Set aside for 10 minutes.

Heat up a little

Heat up a little oil in a frying pan and fry the onions until translucent, for about 3-5 minutes. Add the garlic cloves and fry for another minute. Set aside.

In a medium-sized bowl,

In a medium-sized bowl, add the cooked amaranth, the flaxseed mixture, the herbs, cooked onion and garlic, flour, lemon, nutritional yeast and mix well. Add salt and pepper to taste.

The mixture should come

The mixture should come together and be fairly sticky but easy to handle with your hands. If it's too sticky add a little more flour. Create small meatballs with the amaranth mixture and set them aside for frying.

Heat up a little olive oil in a frying pan and fry the amaranth meatballs on both sides until crispy and golden.

Serve them in a hot dog bun with the toppings of your choice.
