Step 1

In a medium bowl, sift together the sugar, the flour, the baking powder, the cinnamon, and the salt.

Step 2

Create a well in the center of the dry ingredients and add 1/3 cup of the milk, the eggs, and the applesauce.

Step 3

Stir it together just so that it is just combined, making sure not to over-mix it.

Step 4

Gently fold in the diced apples.

Step 5

In a heavy skillet or Dutch oven over medium-high heat, add the oil until it reaches a depth of about 1 1/2 inches. Heat the oil to 375 degrees F.

Step 6

Working in batches, gently drop in about 1/4 cup of the batter into hot oil.

Step 7

Carefully, spread the dough out slightly. You have to do it immediately after placing it in the oil to get the right shape.

Step 8

Cook until the fritter is golden-brown, about 2 minutes on each side.

Step 9

Place the fritters on paper towels or on a cooling rack to drain off the excess oil.

Step 10

In a small bowl, whisk together the remaining milk, the powdered sugar, and the vanilla.

Step 11

When the fritters have cooled, drizzle or dunk each fritter in the glaze, turning them over to make sure each of the sides are coated as desired.

Step 12

Place the fritters on a wire rack to allow the glaze to dry and drip off any excess.

Step 13

Serve warm!
