Step 1
Place Varoma dish onto mixing bowl lid and weigh chicken, fried shallots, potato starch into it. Then add dried parsley, turmeric, onion powder, celery salt, sugar, pepper and salt and mix to coat.
Step 2
Place simmering basket onto mixing bowl lid and weigh rice into it, then rinse rice until water runs clear.
Step 3
Place water into mixing bowl, insert simmering basket with rice, then place Varoma into position, secure Varoma lid and cook 15 min/Varoma/speed 4.
Step 4
Remove Varoma and set aside. Remove simmering basket with aid of spatula and transfer rice to a thermal serving bowl or other large bowl. Pour cooking liquid into a jug and set aside.
Step 5
Place oil, spring onions/green onions and garlic into mixing bowl and chop 5 sec/speed 7, then sauté 3 min/100°C/speed 2.
Step 6
Add apricot nectar, stock paste, cooked chicken and 150 g of reserved cooking liquid (see Tips), then cook 12 min/100°C//speed 1.
Step 7
Transfer to a serving dish, sprinkle with parsley and serve with steamed rice.
