Step 1
To make an authentic Thai panang curry, we have to first cook 200ml of the coconut milk (in a wok pan without oil) until the oil inside of it seperates from the coconut milk and it increases in thickness. This will take around 10 minutes. Once ready the coconut milk will be thick and oil will seem to appear.
Step 2
Add panang curry paste once the coconut milk is thickened.Mix with the coconut milk.Add the rest of the coconut milk.Stir until everything blends together.
Step 3
Add the pork meat and spread evenly across the panang curry so that the meat will not stick together. Cook until meat is no longer raw.
Step 4
Add palm sugar.Add fish sauce.Stir until ingredients dissolve.
Step 5
Add the pea beans and let cook for 1 minute.Add kaffir lime leaves.Add chillies.Turn off the fire.
Step 6
The authentic Thai panang curry is now ready to be served. Serve with steamed white rice. Enjoy!
