Ingredients: 1 1/2 ounces blanco tequila, such as Don Julio Blanco; 1 ounce fresh lime juice; 1 ounce agave nectar; 1 pasteurized egg white; 1 slice jalapeno with 2 or 3 seeds; Lime wedge, for garnish

Lime wedge,

Put the tequila, lime juice, agave, egg white and jalapeno in a cocktail shaker and muddle the jalapeno. Add large ice cubes, shake vigorously and single-strain into a rocks glass over fresh ice. Garnish with a lime wedge and serve.

This is our new favorite margarita! Not too sweet, not too heavy. Never would have thought to use egg whites in a cocktail but  it turned out fabulous.
