Step 1
In a large skillet, cook the bacon over medium heat until crisp. Remove the bacon from the skillet with a slotted spoon and drain on paper towel.

Add the onion and garlic to the skillet and cook in the bacon fat until softened, about 5 minutes.
Step 3
Add the brown sugar, apple cider vinegar, maple syrup, salt, black pepper, and cayenne pepper to the skillet and stir to combine.
Step 4
Add the bacon back to the skillet and cook for about 10 minutes, or until the mixture is thickened and bubbly.
Step 5
Let cool slightly and then transfer to a jar or container. The jam will keep in the fridge for up to 2 weeks.
