Place the rack in the middle of the oven

Pre-heat oven - 500°f

Step 3

Mince and mash garlic to a paste with salt

Step 4

Transfer to a small bowl and stir in paprika, cumin, oil, and black pepper

Step 5

Pat tenderloin dry, then rub garlic mixture all over it

Step 6

Roast - approx 25 min, 500°f

Step 7

Transfer to a platter along with any pan juices and cool, loosely covered with foil, 30 minutes to 1 hour

Step 8

Stir together mayonnaise, paprika, cumin, and pepper

Step 9

Stir in meat juices and salt to taste

Step 10

Cut meat into thick slices

Step 11

Serve warm or at room temperature, with smoked-paprika mayonnaise
