Step 1
Add the desiccated coconut, cold coconut milk, and maple syrup to a food processor bowl. Process for a few seconds until everything is well mixed together.
Step 2
With the help of a spoon or using your hands, roll the mixture into small balls and place them onto a baking tray or a plate. You should be able to make around 12 balls.
Step 3
Place the balls in the freezer for around 10-15 minutes.
Step 4
Melt the chocolate. Break the chocolate into small chunks, and put them in a heat-resistant glass bowl. You can melt the chocolate on a double boiler or in the microwave at 20 seconds intervals, stirring each time, until silky smooth (see note 2).
Step 5
Using a fork, dip each ball into the melted chocolate, letting any excess drip off. Place the balls to cool at room temperature on a cooling rack or a baking tray covered with parchment paper. You can decorate them with a touch of shredded coconut before the chocolate hardens.
Step 6
Keep them in an airtight container in the refrigerator or in the freezer until you are ready to each them.
