Step 1
Cut the capsicums into 2.5cm strips and halve crosswise. Cut the potatoes into 2.5cm pieces.
Step 2
Lightly fry onions and garlic.
Step 3
Add curry powder, chicken, potatoes, coconut milk and stock. Cover and simmer for 20 minutes.
Step 4
Add capsicum and remaining ingredients. Simmer for a further 10 minutes.
Step 5
Remove from heat and serve on a bed of rice.
