Step 1
Line a 9” round x 3” deep springform pan with parchment paper and place it on a cookie sheet for baking.

Press the cookie dough mixture evenly along the bottom and sides of the pan.

Place in the fridge while preparing the filling.

Preheat the oven to 325°F.

In a food processor, blend cream cheese, sour cream, eggs, vanilla extract, and sugar until smooth.

Pour the mixture into the prepared crust.

Cube the cooked brownie into 1” pieces and gently place them into the cheesecake batter.

Drizzle ½ cup caramel on top of the brookies before baking.

Bake for 65-80 minutes. The center should jiggle slightly but have a matte finish. If the top is still glossy, continue baking.
Step 10
Remove from the oven and let it cool at room temperature for 1 hour.
Step 11
Transfer to the fridge and chill for at least 8 hours.
Step 12
Melt dark chocolate chips using a microwave or double boiler.
Step 13
Whisk in heavy cream until smooth.
Step 14
Pour the ganache over the chilled cheesecake.

Slice and enjoy!
