Step 1
Melt butter in a saucepan over medium heat. Add onion and garlic, and cook for 1-2 minutes or until softened and aromatic. Stir in curry powder and garam masala, and cook for 30 seconds or until aromatic. Stir in passata, cream and sugar, then bring to a simmer. Season with salt and simmer for 2-3 minutes or until slightly thickened. Stir in the chicken.
Step 2
To assemble, preheat a large non-stick frying pan over medium heat. One at a time, spread 1 naan bread with a generous layer of the butter chicken mixture. Sprinkle with a handful of cheese, then cover with another naan. Lightly spray both sides with oil. Toast in the pan for 3-5 minutes or until golden, crisp and the cheese has melted.
