Give regular nachos a boost and layer crunchy corn chips with chicken seasoned with a sweet and spicy firecracker sauce, all topped with melted cheese and a mild jalapeño kick.

vegetable oil

chicken thigh fillets, finely chopped

garlic cloves, crushed

44.00 gm sweet chilli sauce

21.00 gm soy sauce

40.00 ml sriracha chilli sauce

tsp rice wine vinegar

brown sugar

(1 cup) Mozzarella Shredded Cheese

Sriracha chilli sauce, extra, to serve (optional)

green shallots, thinly sliced

(1/4 cup) mayonnaise

Step 1

Heat oil in a wok or large deep frying pan over medium-high heat. Add chicken and stir-fry for 5 minutes or until golden. Add garlic and stir-fry for another 30 seconds or until aromatic. Stir in sweet chilli sauce, soy sauce, sriracha, vinegar and sugar, then bring to a simmer. Simmer for 1-2 minutes or until the sauce thickens and coats the chicken.

Step 3

Arrange corn chips on a large baking tray and top with the firecracker chicken, then sprinkle with mozzarella. Bake for 8-10 minutes or until the cheese is melted and bubbly.

Step 4

Meanwhile, to make sriracha mayo, combine mayonnaise and sriracha in a small bowl.

Step 5

Drizzle nachos with the sriracha mayo and a little extra sriracha, if using. Scatter with shallots and jalapeños. Serve immediately.

Butter chicken naan toasties recipe

unsalted butter

brown onion, finely chopped

garlic cloves, finely chopped

2.50 gm mild curry powder

tsp garam masala

milliliters (1/2 cup) tomato passata

milliliters (1/2 cup) Thickened Cream

(2 cups) shredded Whole Chicken Roast

x 250 grams pkt Garlic Naan

(2 cups) grated mozzarella (or cheddar, choose your favourite)

Coriander sprigs, to serve

Melt butter in a saucepan over medium heat. Add onion and garlic, and cook for 1-2 minutes or until softened and aromatic. Stir in curry powder and garam masala, and cook for 30 seconds or until aromatic. Stir in passata, cream and sugar, then bring to a simmer. Season with salt and simmer for 2-3 minutes or until slightly thickened. Stir in the chicken.

To assemble, preheat a large non-stick frying pan over medium heat. One at a time, spread 1 naan bread with a generous layer of the butter chicken mixture. Sprinkle with a handful of cheese, then cover with another naan. Lightly spray both sides with oil. Toast in the pan for 3-5 minutes or until golden, crisp and the cheese has melted.
