Step 1

Preheat fan-forced oven to 150C.

Step 2

Combine all ingredients except chocolate in a mixing bowl and mix well.

Step 3

Line a baking tray with baking paper.

Step 4

Place a metal egg poaching ring onto the baking tray and spoon mixture into the ring.

Step 5

Press lightly with the back of the spoon to pack the mixture in.

Step 6

Lift the ring and a uniform shape will remain. Repeat this with the rest of the mixture.

Step 7

Bake for 15-20 minutes. Keep an eye on them and remove when lightly browned.

Step 8

Cool on the tray before gently removing with a spatula. Melt chocolate and spread over flat under-side of the biscuit, drag a fork through to create a pattern.

Step 9

Allow chocolate to set and store in an airtight container.
