Step 1

Taking the toasted bread, spread the pesto over the top. Add cottage cheese, chopped tomatoes, everything bagel seasoning, balsamic glaze*, and basil garnish. Serve immediately.

Using 1/4 cup balsamic vinegar, pour into a small sauce pot. Bring to a quick boil, then reduce heat and simmer for 2-3 minutes or until slightly thickened. Drizzle about 1 teaspoon over the cottage cheese toast. Reserve the rest (can be reheated in microwave for a few seconds later), or discard.
